No Bake Energy Bites

I do love a good snack.  I am somewhat of a grazer and especially now that I have started back at work I like to have something to nibble on while I am at my desk.  Admittedly, I tend to nibble quite frequently so I have been looking for something relatively healthy otherwise it has been known for a packet of biscuits to be consumed in a day!

I found these via Pinterest and thought I would give them a go.  They are quick to make, taste yummy and perfect lunchbox snacks.  They are also really good for moms who need a quick boost of energy on those days when it is lacking and you have run out of coffee and you need a boost PRONTO!

1 cup oats
2/3 cup dessicated coconut
1/2 cup smooth (sugar free if possible) peanut butter
1/2 cup bran
1/2 cup dark chocolate chips
1/3 cup honey
1 teaspoon vanilla extract


Put all of your ingredients into a bowl and mix thoroughly - I initally used a wooden spoon but then just used my hands as its easier and c'mon - we all love to use our hands when baking. It's fun!

Cover and chill in the fridge for at least 30 minutes.

Once chilled, roll into balls and store in an airtight container in the fridge for up to a week.  I consumed a few with a cup of tea...well, I had to test them!  I can confirm they are deliciously sweet and perfect bite size snacks.  The peanut butter, oats and chocolate chips go so well together!
